Spicy Beanburgers

Makes 4, or 12 ‘falafel’ balls

  • 1 small onion, peeled and chopped
  • 1 medium carrot, grated
  • 1 tin beans
  • 1/2 tsp each chilli powder / smoked paprika
  • salt & pepper

Combine all the ingredients in an ovenproof dish and mix well.

Cook at 180 for 15-20mins until the carrots are tender.

Remove from the oven and cool.

Mash the mixture until half smooth / half chunky.

Taste, and season again if necessary

Shape into 4 burgers (roll in polenta if you like a crust!)

To eat, fry in a little oil each side or drizzle with oil and return to oven for 10-15mins (depending on thickness)

Can also be rolled into balls to make falafel!

Serve with sweet potato wedges & salad
